This is a rare, red-stemmed spelt from Canton Muri in Switzerland.  An excellent high altitude wheat tracing to the Middle Ages. The stems are red while the seed heads are green, but gradually ripen straw color as the plants dry out.  This spelt was harvested both for Grünkern (green, unripe seeds), which were lightly smoked and cooked as porridge or stuffing, and for ripe seeds to make bread flour.
