Chocolate Molé with Duck Liver Paté

This molé is a rich, creamy dip based on sunflower seed butter, unsweetened chocolate, turkey broth, spices, and chipotle peppers.

Peruvian Pepperpot

A hearty soup consisting of turkey broth, diced turkey and potatoes, flavored with Aji Amarillo peppers. A side dish of minced peppers will be provided for those who prefer their soup extra spicy.

Peruvian Ceviche of Bay Scallops and Shrimp with Aji Limó

A marinade of poached seafood acidulated with lime juice and vinegar spiced with citrusy Aji limó peppers.

Mayan Salad with Chactsul and Chiltoma Peppers, Mexican Style Dressing with Mango Vinaigrette

Finely shredded Savoy cabbage, red onions, and sweet peppers with the leaves of edible cosmos, nasturtiums, and Jewels of Opar.

Brazilian Sweet-Sour Condiment of Wild Gourds and Amazon Biquiñho Peppers

Argentine Style Grilled Beef (churrasco) and Grilled Duck Breast with Chimichurri

Grilled beef and duck served on bamboo spits with a sauce of raw, coarsely minced parsley, garlic, red chili peppers, olive oil and red wine vinegar.

Side Dishes Eaten on Tortillas

Bolivian Style Potatoes with Huacatay Sauce

Diced oven-browned potatoes in a green sauce made with the leaves of a rare Andean marigold (Tagetes minuta).

Paraguayan Squash Kievé

A dish with the texture of mashed potatoes from the Guarani Tribe consisting of pureed pumpkin, masa harina, fresh cheese and herbs. Garnished with tomato puree and quillquiña (Bolivian Coriander).

Nicaraguan Refried Beans

Nicaraguan Frijoles Negros beans recooked with garlic, onions, cilantro, and red wine vinegar. Recipe from the family of Nicaraguan-born Roughwood Board Member Enrique Balladares-Castellon.

Pipián of Pumpkin Seeds and Peanuts

A thick stew treated like a sauce or dip consisting of toasted pumpkin seeds and peanuts cooked with fire-roasted corn and shredded poussin.

Sweets

Mango-Ayote Flan au Rhum, Boucheés of West Indian Mincemeat, Kiwicha Shortbreads, Quince Candy

Ayote is a rare, green-fleshed squash tracing to the ancient Mayans. Kiwicha is flour made from amaranth, at one time a staple food of the Incas.

Two glasses of complimentary wine will be served with the meal
