Tritcum dicocum. 
 
This rare alpine summer emmer came to us from Pro Specie Rara in Switzerland. It takes its name from the blue-gray color of the ripe seed heads and is a good high altitude wheat which is generally planted as a summer crop for August harvest.  However, we have also grown it as a winter wheat, so it is quite adaptable, and makes wonderful bread. This is one of the grains tracing to ancient Switzerland.
