Borie’s Yellow Scotch Bonnet Pepper

            This rare Caribbean pepper was brought by Madame Elizabeth Beauveau from Cap Francois in Haiti to Philadelphia in 1805.  Her wealthy exiled French plantation family continued to raise this pepper to manufacture Pepper Sherry (original recipe available in Dr. Weaver’s Roughwood Book of Pickling) which became a culinary symbol of classic Franco-Philadelphia cuisine during the 1800s.
