We recommend this attractive lima for its culinary qualities, especially in mixed pickles, like bean chow-chow. The red flecking on white develops as the beans mature in the pod; vinegar tends to cause the color to fade, but the rich flavor is worth the effort! Allow 116 days to harvest although you can pick them young as they are developing. The bean originated in the collection of Curt Burroughs, Memphis, Missouri and is thought to be an out-crossing of Christmas.
